Chuck roast & ox tail stew with roma tomatoes

This is my chuck roast & ox tail stew with roma tomatoes, scallion, and spices served over noodles with my homemade habanero/birds eye/szechwan/korean blend hot sauce. I have various recipes for this type of stew and this is by far the lightest in terns of spices and I like it very much. I also like the texture of the romas because they stay better than regular rounds and have better flavor.
